Baked Scallops: Submitted by: Kimmi Campagna | Date Added: 12 Oct 2009 Ingredients:


1.5 lb. Sea Scallops

3/4 to 1 cup Whole Milk

1/2 cup Butter

1/2 cup Cracker Meal

1/2 cup Fresh Parmesan, shredded coarsely

1 dash Garlic Powder

Salt to taste


Cooking Instructions:


Place scallops in a single layer, sides closely touching, in a shallow baking dish sprayed with non-stick coating.

Pour milk overtop, using to cover completely.

Wrap and refrigerate for 2 hours.

Melt butter (do not use margarine!) and allow to cool slightly.

Remove scallops from the refrigerator and drain excess milk...but do not rinse.

A "coating will have formed.

Re-arrange if necessary to single layer, sides closely touching in baking dish.

Pour melted butter evenly over the scallops.

Blend: Cracker meal, cheese, garlic powder and salt.

Sprinkle evenly over the scallop mixture.

Bake in a pre-heated 450° oven for 8 to 10 minutes, or until desired doneness.

Do not over bake!

*Scallops change from translucent to opaque as soon as they are done.

The key is not to over cook the scallops and use good quality fresh parmesan.

Add your favorite pasta or rice and asparagus, a little lemon zest and you have a gourmet meal in minutes!
