1 large Onion, chopped

Olive Oil

3 cloves Garlic, chopped

3 Hot Peppers, chopped

1 Green Pepper, chopped

2 Zucchinis, diced

2 cups Cut Green Beans

2 cups Broccoli

2 cups Kale or Spinach, chopped

2 cups Fresh Corn off the Cob

2 large cans Stewed or Diced Tomatoes

1 cup Pepperoni, diced

Salt & Pepper to taste

Water

1 cup Basil, chopped

Parmesan Cheese


Cooking Instructions:


Brown onion and green pepper in olive oil.

Mix together, garlic, hot peppers, zucchini,green beans, broccoli, kale or spinach and fresh corn.

Mix with onion and green pepper.

Add 2 large cans of stewed or diced tomatoes (if you have fresh tomatoes add them).

Add pepperoni and salt & pepper to taste.

Add water 2 inches above veggies.

Keep water at veggie level to have broth when eaten.

Cook veggies until tender.

Last 10 minutes add basil.

Top with Parmesan Cheese when serving.
