2 T. Olive Oil
1 med. Onion, chopped
4 cloves Garlic, chopped
1 (49.5-oz.) can Chicken Broth
1 (10-oz.) pkg. Frozen Chopped Spinach
1 (8-oz.) bag Cheese Tortellini
1 cup Parmesan Cheese
Heat Dutch oven on medium heat.
Add oil, then onion and garlic.
Saute' 5 minutes.
Add chicken broth, bring to boil.
Add tortellini, cook 10 minutes.
Add chopped spinach.
Simmer for 5 minutes.
Add Parmesan cheese, stir until melted.
