4 CUPS SHREDDED UNPEELED ZUCCHINI1/2 TEASPOON OF SALT2 EGGS, BEATEN1/2 CUP PARMESAN CHEESE1 CUP SHREDDED CHEDDAR CHEESE2 CUPS SHREDDED MOZZARELLA CHEESE1 LB. GROUND BEEF1/2 CUP CHOPPED ONION6 OZ. CAN OF TOMATO SAUCE SEASONED WITH 1/2 TSP. ITALIAN SEASONING1 CHOPPED GREEN PEPPER1/2 CUP CHOPPED PEPPERONI

Cooking Instructions:

PLACED ZUCCHINI IN COLANDER, SPRINKLE WITH SALT AND LET DRAIN FOR 10 MINUTES THEN SQUEEZE OUT AS MUCH MOISTURE AS POSSIBLE.  COMBINE THE ZUCCHINI, EGGS, PARMESAN, 1/2 CUP CHEDDAR, AND 1 CUP MOZZARELLA.  PRESS INTO A GREASED 9X13 INCH PAN.  BAKE AT 400 DEGREES FOR 20 MINUTES, UNTIL LIGHTLY BROWNED.  WHILE BAKING, BROWN GROUND BEEF AND ONION AND DRAIN.  ADD THE SEASONED TOMATO SAUCE AND SPOON OVER THE BAKED ZUCCHINI "CRUST".  TOP WITH 1/2 CUP CHEDDAR AND 1 CUP MOZZARELLA, THEN SPRINKLE WITH GREEN PEPPER AND PEPPERONI.  BAKE 20 MINUTES LONGER.  LET STAND 5 MINUTES BEFORE SLICING.
