Zucchini Casserole: Submitted by: Pam Renowden | Date Added: 31 Jul 2018 Ingredients:

1 med. zucchini diced1 can Italian flavored diced tomatoes3 potatoes diced1/2 green pepper1 small onion chopped1T crushed garlicParmesan CheeseMozarella CheeseFresh Basil chopped (optional) 

Cooking Instructions:

In a small amount of olive oil, fry zucchini, pepper, potato, garlic and onion till soft and starting to brown in a non-stick skillet.Spoon all into greased casserole dish.Sprinkle with parmesan, then cover with shredded mozarella.Bake 35 mins. @ 350 degrees, until all cheese is melted.
