Irish Soda Bread

Irish Soda Bread Ingredients

2 cups unbleached all purpose flour

1 cup whole wheat flour

½ cup sugar

2 tsp. baking soda

½ cup butter, cold & cut into bits

1 cup golden raisins

3 tsp. caraway seeds

1 ½ cups buttermilk

Irish Soda Bread Cooking Instructions

Preheat oven to 350º.

Whisk flours, sugar, and baking soda

Add butter and toss to coat

Rub butter with fingertips until coarse

Add raisins and caraway seeds and toss till coated

Make a well and add buttermilk

Stir till moist but do not overwork

Scrape bowl with hand and put on lightly floured surface and knead 1 minute

Form into all and put on greased cookie sheet and make a deep x on top and then brush with buttermilk left in measuring cup

Bake till golden brown 50-55 minutes.
