Easter Cheese

Easter Cheese Ingredients

15 eggs1 quart milkpinch of salt2 tbsp vanilla1 1/2 cups sugarCheese cloth or pillow caseyellow coloring optional  

Easter Cheese Cooking Instructions

Pour milk into saucepan.  Bring to a boil.  Crack eggs into a mixing bowl and beat slightly then add and stir them to the hot milk.  Cook over low heat about 7 minutes.  Turn up to medium high heat then add sugar, salt, vanilla and coloring {optional} and stir continuously scraping bottom of pan to make sure it isn't burning adjusting heat as needed .  It will be done when it looks like scrambled eggs floating in water.  Pour into cheese cloth or pillow case.   I put my pillow case or cheese cloth into a strainer and in my sink to start the draining process.  Then hang to remove liquids for 2 hours. Place in storage baggie and refrigerate.  Remove and slice for serving. This is an Easter favorite for our family. Note; you can add more vanilla and sugar to taste too while cooking.  Farm eggs are a brighter yellow color Easter cheese than store bought eggs.  So add coloring to make it a brighter yellow color.

This is almost the same recipe I use. I am Slovak and have been doing the traditional cheese and bread every year for what seems like forever, learned from my mom and aunt how to make these. Some of my favorite Easter memories. Left by: Saundra (16 Apr 2019)
