Wisconsin Cheese Soup

Wisconsin Cheese Soup Ingredients


2 tbsp butter

1 tbsp flour

1 tbsp chopped onion

1 qt milk

1/2 tsp salt

1/4 tsp pepper

2 slices bacon, fried crisp and crumbled

1 tsp chopped pimento

1/4 lb Wisconsin American cheese, cut up


Wisconsin Cheese Soup Cooking Instructions


Melt the butter in a medium kettle.

Add the flour and onion, and saute over medium heat until the onions begin to get soft; do not brown.

Gradually add the milk, then the salt and pepper.

Heat thoroughly over medium heat stirring constantly (don't let the milk curdle), until slightly thickened.

Add the bacon, pimento, and cheese; stir until the cheese melts.

Do no boil; heat slowly.

Pour into bowls, and serve.



Serves 4 to 6.
