Tuscan Soup

Tuscan Soup Ingredients

1 sm. Onion, chopped

1 sm. Carrot, sliced

1 T. Olive Oil

2 (14-1/2-oz.) cans Chicken Broth

1 cup Water

3/4 tsp. Salt

1/4 tsp. Pepper

1 (15-oz.) can White Kidney or Great Northern Beans, rinse & drain

2/3 cup Small Farfalle Pasta, uncooked

3 cups Fresh Escarole or Spinach, thinly sliced

Tuscan Soup Cooking Instructions

In a 2 quart saucepan saute onion and carrot in oil until onion is tender.

Add broth, water, salt & pepper.

Bring to a boil.

Stir in beans, pasta & return to boil.

Reduce heat cover and simmer for 15 minutes or until pasta & veggies are tender.

Stir occasionally, add escarole & heat through.

Serves 4.
