Turkey Broccoli Cheese Soup

Turkey Broccoli Cheese Soup Ingredients

Leftover turkey, how ever much desired 

4 cups turkey broth, from leftovers

1 cup Frozen or fresh broccoli, more or less to your liking

1 small onion, minced

1 clove garlic, minced (optional)

4 Tbsp flour

4 Tbsp butter/margarine

2 cups shredded mild cheddar

Turkey Broccoli Cheese Soup Cooking Instructions

Heat butter/margarine in large pot.  Saute onion (& garlic) until soft, then add flour to make a rouge (not sure how to spell that).  Once the flour and butter blend and get bubbly add turkey broth, turkey & broccoli.  Let come to a boil for 1 minute, then simmer until begins to get thick.  Add cheese, more or less to desire, and continue to simmer until the cheese is melted and stirred through the soup.  If it gets too thick, add more broth; if it is not thick enough, you can mix flour & a little COLD water until smooth, then pour into soup while boiing.  Or try adding leftover mashed potatoes to help thicken, I hear that works good to thicken soup as well.  I was tired of turkey noodle soup, but still needed to use thanksgiving leftovers when I whipped this together, so there may still be some kinks to work out.
