Super Black and Gold Soup

Super Black and Gold Soup Ingredients

2 or 3 Yukon Gold Potatoes, peeled & diced

1/2 cup Onions, diced

1/2 cup Celery, diced

1 clove Garlic, finely diced

4 T. Margarine

4 T. Flour

3 cups Chicken Broth

3 cups Milk

1 can Yellow Corn, drained

1 can Black Beans, rinsed and drained

2 tsp. Taco Seasoning

Black Pepper, to taste

2 to 3 drops Yellow Food Coloring

Super Black and Gold Soup Cooking Instructions

Cook potatoes in boiling salted water for about 10 minutes, or until tender.

Drain and set aside.

Saute onions, celery, and garlic in melted margarine for about 5 minutes.

Remove from heat and add flour, stirring with wire whisk.

Return to heat and add chicken broth and milk, all at once.

Bring to a boil, stirring constantly.

Reduce heat and simmer for 5 minutes.

Add taco seasoning, and pepper.

Stir well.

Add food coloring, potatoes, corn, and beans.

Top with shredded yellow cheese, and serve with black and gold tortilla chips.
