In a skillet add olive oil, potatoes, grated onion and ham. Cook for about 10 minutes or until potatoes are translucent, remove from heat and sit aside. Mix 2 C flour, eggs, salt and pepper (about 1 tsp. each), 1 C milk and 1/2 C water in bowl for homemade noodles. When dough mixture is thoroughly combined, roll out on a floured surface (about 1/4 inch thick) and cut rolled out dough into noodles. In another skillet put 2 Tbs. flour and 4 tsp. butter, cook for about 2 minutes on medium heat; add 3 C milk and 2 1/2 C water; stir often as this mixture will thicken. Add cooked potatoes, onion, and ham. Once this mixture reaches boiling, add the homemade noodles one at a time. Cook on medium heat for about 10 minutes, stirring frequently. Add the mashed potato flakes and continue to cook on low heat for about 10 more minutes. Remove from heat and stir in frozen peas.
