Western Lima Beans

Western Lima Beans Ingredients

1 lb large lima beans

1/2 lb ground beef, 3 tbsp oil

1 medium onion, finely chopped

2 cans tomato sauce

1/2 cup lima bean water

1 tbsp brown sugar

1-1/2 tsp salt

Dash of poultry seasoning

Western Lima Beans Cooking Instructions

Soak beans over night, drained and cover with 1-1/2 tsp salt water.

Boil 1 to 2 hours till tender.

Drain, saving 1/2 cup lima bean juice.

Brown meat and onion in oil into small pieces.

Add sauce, bean water, sugar and poultry seasoning.

Place lima beans in casserole, cover with the sauce.

Bake uncovered at 350 degrees for 30 to 35 minutes.

Western Lima Beans Comments

I am 60 years young and grew up eating these beans. I wanted to make them tonight and could not find my mom's old recipe. Thanks so much for publishing this. I increased the meat to 1 pound, omitted the sugar (mom never put in in this recipe) and added some bell pepper (because mom did). SO............GOOD!!! PS - Found moms recipe 2 hrs after dinner.
