Marinated Carrots

Marinated Carrots Ingredients


2 lbs fresh carrots

1 green pepper (cut in strips)

1 cup white sugar

3/4 cup cider vinegar

1 large onion (sliced)

1 cup tomato soup

1 tbsp salad oil

1/2 tsp dillweed

1 tsp salt

1/2 tsp pepper


Marinated Carrots Cooking Instructions


Wash, peel, and cut carrots into circles.

Cook and steam until tender then drain.

Combine sugar, oil, soup, vinegar, salt, pepper and dillweed in a saucepan.

Bring to a boil.

Stir  and dissolve sugar, layer carrots, onions and green peppers in an oven proof dish.

Pour hot mixture over vegetables and let cool, cover and keep in refrigerator.

Drain and serve cold.



Keeps about 4 weeks.
