Green Beans Parmesan

Green Beans Parmesan Ingredients

1-1/2 lb fresh green beans, cut in 1 inch pieces

3 tbsp olive oil

1 cup diced sweet yellow pepper

3/4 cup diced sweet red pepper

1/4 cup chopped onion

1 clove garlic, minced

1 tsp dried whole basil

1/8 tsp dried whole oregano

1/8 tsp dried whole thyme

1/8 tsp pepper

3/4 cup grated parmesan cheese, divided

Green Beans Parmesan Cooking Instructions

Cook green beans in boiling water to cover 3 minutes; drain, and plunge into cold water.

Drain well, and set aside.

Pour oil into a large skillet; place over medium heat until hot.

Add sweet peppers, onion, and garlic, and saute 3 minutes.

Add reserved green beans, basil, and next 3 ingredients; cover, reduce heat, and simmer 7 minutes or until vegetables are tender.

Remove from heat; stir in 1/2 cup cheese.

Transfer bean mixture to a serving dish; sprinkle with remaining 1/4 cup cheese.

Yield: 8 servings.
