4 large heads Cauliflower
1 box Saltine Crackers, crushed
1 qt. Heavy Cream
1 lb. Butter, melted + 1 stick
3-4 large Eggs, beaten with small amt. of Cream

Clean leaves off and heart out of cauliflower.
Cook cauliflower until fork goes in.
Grease or spray a baking dish at least 2-3/4 inches deep.
Put cracker crumbs on bottom and up sides of dish.
Layer 1 of cauliflower florets on bottom of casserole dish close together to cover bottom.
Pour on small amount of egg mixture on entire cauliflower.
Pour on small amount of Cream mixture on entire cauliflower.
Cover with small amount of crackers. Pour butter over crackers.
Continue to repeat until ingredients are gone.
Keep a least 1/4 inch of casserole dish above cauliflower.
Cover with aluminum foil. Bake at 350° until cauliflower is tender.
Repeatedly test after 20 minutes.
Remove cover for 5-10 minutes before serving.
