Gluten Free Rice-Potato Croquettes Ingredients

One cup white rice, cooked as directedTwo medium-size red potatoes, chopped small and boiledOne cup GF chicken stockHalf stick butter, meltedOne eggMedium-size yellow onion, chopped Olive oilGF Panko crumbs, sprinkled with PaprikaParsley flakes

Gluten Free Rice-Potato Croquettes Cooking Instructions

Combine rice, potatoes, egg, onion, butter and chicken stock.  Refrigerate overnight or several  hours .  Scoop into small balls and roll in panko crumbs.  Transfer onto skillet of which olive oil is simmering until golden brown.     Transfer into baking dish with enough water to keep dish moist .  Sprinkle with parsley flakes.   Bake covered 45 minutes at 325 degrees.  (You can use brown rice but white will give a stickier consistency)
