12 medium size red potatoes, unpeeled
3 cup shredded cheddar cheese, divided
2 cup shredded mozzarella cheese
2 cup ricotta cheese
1-8 oz carton sour cream
1/3 cup grated parmesan cheese
1/4 cup finely chopped green onion
3 tbsp chopped fresh parsley
2 cloves garlic, crushed
1 tsp dried basil
1/4 tsp pepper

Cut potatoes into 1 inch cubes.
Cook in boiling water to cover 10 minutes.
Drain well, and set aside.
Combine 1-1/2 cup cheddar cheese and next 9 ingredients in a large bowl; stir well.
Gently stir in potato cubes.
Spoon mixture into a greased 13x9x2 inch baking dish.
Sprinkle with remaining 1-1/2 cup cheddar cheese.
Bake, uncovered, at 350 degrees for 30 minutes or until potato is tender.
Yield: 8 to 10 servings.
