Cheesy Baked Vegetable Casserole

Cheesy Baked Vegetable Casserole Ingredients


1 16oz package frozen mixed broccoli, carrots and cauliflower

1 4oz can chopped pimento, drained and divided

1 10oz can mushroom soup

1/3 cup sour cream

1/4 tsp pepper

1/2 tsp hot sauce

1 3oz can of French-fried onions

1/2 cup shredded Swiss cheese, divided

1/2 cup shredded Monterey jack cheese, divided


Cheesy Baked Vegetable Casserole Cooking Instructions


Preheat the oven to 350 degrees.

Spray a large casserole dish with non-stick cooking spray.

Combine vegetables, half of the pimento, soup, sour cream, pepper, hot sauce, half of the fried onions and half of each of the cheese, in a bowl and mix.

Spoon the mixture into the casserole dish.

Bake for 20 minutes.

Sprinkle the remaining friend onions and cheeses on top of the casserole and bake for 5 minutes longer.

Remove the casserole from the oven and sprinkle with the rest of the pimento and let stand for about 10 minutes before serving.  



Makes 5 - 6 servings.
