Anna's Dilly Zucchini

Anna's Dilly Zucchini Ingredients

2 cups 1/4" cubed, peeled zucchini

2 cups cottage cheese or ricotta cheese

3 medium eggs

1/2 cup fontina cheese, 1/4" cubes or grated

2 tbsp cubed butter, 1/4"

1 tbsp dill weed

1/4 tsp each, salt and pepper

8 oz grated cheddar cheese

Anna's Dilly Zucchini Cooking Instructions

Beat together eggs, dill weed, salt and pepper.

Stir in cottage or ricotta cheese.

Add butter, fontina cheese and cubed zucchini

Pour into buttered 9x9 baking dish

Top with cheddar cheese

Bake 350 degrees for 1  hour

You can make this into a main meal by adding cubed ham, bacon, or bacon bits.

Elminate butter and top with crushed corn flakes, Ritz crackers, or cheese its. 

Delicious hot as side dish.

When cooled and it sets up, you can cut into squares.
