Pierogie Casserole

 Pierogie Casserole Ingredients

12 lasagna noodles, cooked according to directions on the box and drained

2 1/2 to 3 cups of mashed potatoes ( leftovers from last nights supper is a cost cutter)

1 1/2 sticks of salted butter

1 large onion,diced

2 to 2 1/2 cups shredded white or yellow chedder cheese

 Pierogie Casserole Cooking Instructions

Perheat oven to 350 degrees

spray 9x13 baking pan.

Place diced onions and butter into microwave safe dish and mircowave until butter is melted. Remove from microwave.

Place mashed potatoes into microwave safe dish and warm leftover mashed potatoes in microwave  for approx . 1 to 2 minutes. Remove potatoes from microwave, set aside.

Begin layering casserole by layering noodles, mashed potaotes, butter/onion mixture, cheese.Repeat process until all noodles are used.

Place casserole in oven and bake at 350 degrees for 20 to 25 minutes. 

Remove from oven when cheese is melted on top of casserole. 

Cut into squares and serve. 

Variation is melting butter without onions and only putting onion on half of casserole with each layer. This way family members who do not like onions can still enjoy casserole.
