Summer Salad Ingredients


3 ears corn (cooked and cut off the cob)



1 pound green beans, trimmed and cut in 2 inch pieces



1/2  red pepper, chopped in 1/4 inch pieces



2 slices bacon, cooked and chopped in 1/4 inch pieces



3 Tablesspoons of bacon drippings



2 Tablespoon fresh dill, finely chopped



2-3 Tablespoon chopped almonds and macademia nuts



2 Tablespoon minced sweet onion



4 teaspoon olive oil



2 teaspoon red wine vinegar



2 teaspoon Dijon mustard



salt and pepper to taste



1/4 cup grated parmesan cheese


Summer Salad Cooking Instructions


Bring a large pot of water to a boil, add green beans and cook for about 4-5 minutes. Transfer to  serving bowl.



Add the following: corn, red pepper, bacon, bacon drippings, dill, nuts, and onion. Stir.



In another small bowl, whisk together oil, vinegar, salt, pepper, and mustard. Pour over the salad. Toss; Add the parmesan cheese. Serve warm or at room temperature.
