3 lb new red potatoes
1 cup sliced celery
3 to 4 hard boiled eggs, sliced
8 strips bacon, cut into 1 inch pieces
1 large onion, chopped
1 cup sugar
2 tbsp flour
1 cup cider vinegar
1 to 2 tsp fresh or dried parsley (if dried add to sauce, if fresh add to potatoes)

Boil potatoes for 15 minutes.
Peel and dice into large bowl and add celery.
Cook bacon and add onion half way through.
When bacon is browned and onion soft, add mixture of sugar, flour and vinegar.
Bring to a boil and cook until sauce thickens.
Pour over potatoes and toss.
Add eggs last and toss lightly.
Serve warm.
Can be reheated in microwave.
