Caesar-Style Potato Salad

Caesar-Style Potato Salad Ingredients

5 lb potatoes

1 medium onion, chopped

8 slices bacon, cooked and crumbled

2 hard-cooked eggs, sliced

1/4 cup chopped fresh parsley

1/2 cup vegetable oil

1/4 cup lemon juice

1/4 cup grated Parmesan cheese

1 tsp salt

1 tbsp Worcestershire sauce

1/4 tsp pepper

Caesar-Style Potato Salad Cooking Instructions

Cook potatoes in boiling water and cover 20-30 minutes or until tender; drain.

Peel and cube potatoes.

Combine potato, onion, bacon, eggs, and parsley; toss gently.

Combine oil and remaining ingredients, beating with a wire whisk until blended.

Pour dressing over potato mixture, and toss gently to combine.

Yield: 12 servings.
