Zucchini Lasagna

Zucchini Lasagna Ingredients


1-1/2 med. Zucchini

1 jar Spaghetti Sauce

1 lb. Mozzarella Cheese, grated

1 cup Parmesan Cheese

Ground Beef, optional


Zucchini Lasagna Cooking Instructions


Peel and slice zucchini lengthwise, 3/4" thick.

Preheat oven to 350°.

Place 1/2 cup of spaghetti sauce (your favorite jar sauce or home made sauce) in the bottom of an 8 x 11-1/2" pan.

Spread sauce over bottom.

Layer zucchini, sauce, mozzarella.

End with sauce and sprinkle with 1 cup Parmesan cheese.

Cover with foil, bake 45 minutes.

After 30 minutes take out of oven and drain off a little juice, the zucchini causes a lot of excess liquid

Bake uncovered remaining 15 minutes.

Let sit for 20 minutes to set up.



(Optional: you can add any type of ground meat if you like to the sauce)



Serves 6.
