Zucchini Casserole

Zucchini Casserole Ingredients

6 cups zucchini, cut in chunks

1 cup onion, chopped

2 - 3 carrots

1 stick oleo

8 oz chicken flavored stuffing

1 cup sour cream

1 cup cream of chicken soup

16 oz Ricotta Cheese

Zucchini Casserole Cooking Instructions

Mix zucchini, onion and carrots together

Put mixture in medium pot and cover with water

Bring this to a boil and boil for 5 minutes

Drain the set aside

In medium bowl mix oleo and stuffing mix then set aside

In medium blow mix sour cream and chicken soup

Add this mixture to zucchini mixture in the pot and mix

In 9 x 13 baking dish add 1/2 of stuffing mixture to cover bottom of dish

Pour zucchini mixture on top of stuffing mixture in baking dish

Spread Ricotta cheese on top of zucchini mixture in baking dish

Spread remaining stuffing mixture on top of Ricotta cheese

Place in 350 degree over for 1/2 hour to 45 minutes, until brown and heated through

Add salt and peper to taste on your own plate

This recipe is great for taking a covered dish to any outing.
