4 Eggs, beaten
1/2 cup Oil
1/2 cup Green Peppers, chopped
1/2 tsp. Parsley Flakes
1-1/4 cup Bisquick
1 cup Pepperoni, thin sliced
3 cups Zucchini, unpeeled quartered
3/4 cup Mozzarella Cheese, shredded
3 small cans Mushrooms, drain 1 can of juice
1 lg. Onion, diced
dash Salt & Pepper, to taste
1/2 cup Parmesan Cheese

Mix all of the ingredients together in a large bowl.
Pour into a greased glass 9 x 13 casserole dish for 40 minutes at 350°.
Note:
I put 1 layer of pepperoni on top of mixed zucchini & then sprinkle with more shredded cheese.
Also 1 cup of real bacon bits can be used instead of pepperoni.
