White Chili

White Chili Ingredients

1 Tbsp. canola oil

1-1/2 cups diced onion

2 4-oz. cans chopped green chiles

1 tsp. dried oregano

1 tsp. ground cumin

2 garlic cloves, minced

1/4 tsp. cayenne pepper

3 15-oz. cans great northern beans, drained and rinsed

4 cups reduced-sodium chicken broth

4 cups diced cooked skinless turkey or chicken

2 Tbsps. cider vinegar

White Chili Cooking Instructions

1. Heat oil in a large pot over medium-high heat.

2. Add onion; cook and stir occasionally, until softened.

3. Stir in chiles, oregano, cumin, garlic and cayenne pepper.

4. Cook and stir occasionally for 5 minutes.

5. Add beans and broth.

6. Bring to a simmer and cook for 20 minutes.

7. Add turkey (or chicken) and vinegar; cook for 5 more minutes.

8. Serve



Makes 6 servings, 1 1/3 cups each
