1 large eggplant, cubed
1 medium onion, chopped
1/2 cup green pepper
1 large (1lb - 10oz) spaghetti sauce
12 oz cooked pasta
2 beaten eggs
1 15oz container ricotta cheese
1/2 cup shredded mozzarella
Grated Parmesan
1 tbsp Nature's Seasoning (optional)
Salt and pepper to taste
2 tbsp butter
Extra light olive oil for frying

Saute eggplant until soft in butter and olive oil, set aside.
Saute onions and peppers until soft, add to eggplant.
In a large bowl, stir parmesan cheese, eggs, butter, seasonings, and ricotta cheese.
Layer in Casserole:
Sauce
Cooked Pasta
Eggplant Mixture
Ricotta Mixture
Sauce
Top with Mozzarella
Bake 350 degrees, 20 - 25 minutes.
