2 lbs ground turkey
2 cups bread crumbs (whole wheat bread makes this healthier yet)
1 cup small cubes of cheese - Velveeta, cheddar, or swiss
1 cup ketchup
1 small onion, chopped
2 eggs
1/2 green pepper, chopped - optional
Salt & pepper to taste

Mix all together in food processor or mixer with kneading beater.
Form two loaves.
Place in microwaveable dish with lid, leaving space on sides.
Spread either ketchup or tomato soup on top.
Cover.
Microwave on high for 12 minutes each loaf, or can be put into loaf pans and baked in 350 degree oven for one hour.
Note: These can be frozen uncooked for quick use another time.
