Sausage Topped Zucchini

Sausage Topped Zucchini Ingredients

1/2 lb bulk sausage

1 large onion, chopped

1/2 medium green pepper, chopped

1 garlic clove, minced

1 tbsp olive oil

1 tbsp margarine

1/4 cup parmesan cheese

1 cup spaghetti sauce, divided

2 medium zucchini, cut in half lengthwise and seeds removed

1/4 lb sliced mozzarella cheese 

Sausage Topped Zucchini Cooking Instructions

In a skillet, cook sausage, onion, green pepper and garlic in oil and butter till tender and pork no longer pink.


Stir in parmesan cheese and 1/2 cup spaghetti sauce.

Place zucchini halves cut side up in a greased baking dish.

Spread with the sausage mixture.

Cover and bake at 350 degrees for 35-40 minutes till tender.

Top with cheese and remaining sauce.

Bake uncovered for 5 minutes till cheese is melted.

Yields 2 servings.
