6 boneless skinless chicken breasts
2 eggs, beaten
Italian style bread crumbs
1 16oz bag of thawed chopped spinach
1 14.5oz can of chicken broth
1/3 cup of your favorite cooking wine
1 16oz bag of shredded mozzarella cheese
4 tbsp of chopped garlic
Extra virgin olive oil

Heat about 1/8 of a cup of extra virgin olive oil in a large skillet.
Dip the chicken breasts in the beaten eggs, and then in the Italian style bread crumbs.
Slightly brown the chicken on both sides in the skillet.
In a separate skillet, add about 5 tbsp of extra virgin olive oil, thawed chopped spinach and chopped garlic.
Cook on medium heat for about 15-20 minutes; stirring constantly.
Then place the slightly browned chicken in a baking pan, top with an evenly spread layer of spinach and then a layer of mozzarella cheese over the spinach.
Add the can of chicken broth, and your favorite cooking wine.
Bake in a preheated oven of 350 degrees for 1/2 an hour.
