6 - 6oz fillets
2 tbsp lemon juice
3 tbsp soy sauce
3 tbsp olive oil
2 garlic cloves, thinly sliced
3 tbsp orange juice
2 - 10 oz bags of fresh spinach coarsely chopped
Salt
Pepper

Put salmon in a large shallow baking dish
Mix lemon, soy, orange juice and garlic together then pour over the salmon
Cover and refrigerate for 30m - 1 hour.
In a large skillet heat the olive oil
Add salmon and cook until browned.
Allow 5 - 6 minutes per side
Serve over spinach with a few pieces of garlic and fresh pieces of orange slices.
