Noodles Ontario

Noodles Ontario Ingredients


1 lb mild Italian sausage

2-28 oz cans crushed tomatoes

1 bay leaf

2 tsp minced garlic 

2 tsp sugar

1 tsp dried basil

1/2 tsp dried oregano

1/4 tsp pepper

1/8 tsp salt

1-12 oz package extra wide egg noodles

4 large eggs

1/2 cup parmesan cheese, divided

1/8 tsp ground nutmeg

1/8 tsp pepper

2-10 oz package frozen chopped spinach, thawed and well drained

4 green onions, sliced

4 cups shredded mozzarella cheese (16 oz)


Noodles Ontario Cooking Instructions


Remove and discard casing from sausage.

Brown sausage in a large saucepan over medium heat, stirring until it crumbles; drain.

Return sausage to pan; add tomatoes and next 7 ingredients.

Bring to a boil; reduce heat, and simmer, uncovered, 1 hour, stirring occasionally.

Remove and discard bay leaf.

Set sausage mixture aside.

Cook noodles according to package directions; drain well.

Rinse noodles with cold water, and drain well.

Set aside.

Combine eggs, 1/4 cup parmesan cheese, nutmeg, and 1/8 tsp pepper in a large bowl; beat with a wire whisk until well blended.

Stir in noodles, spinach, and green onions.

Divide half of pasta mixture between 2 greased 9-inch sq. pans.

Layer one-fourth of sausage mixture over pasta mixture in each pan.

Sprinkle 1 cup mozzarella cheese.

Sprinkle with remaining 1/4 cup parmesan cheese.

Bake, uncovered, at 350 degree for 30 minutes or until hot and bubbly.

Let stand 15 minutes before serving.

Yield: 8 servings.

Note: Fix and freeze second pan (up to 2 months) without baking.

Thaw in refrigerator and bake.
