Mock Lobster Casserole

Mock Lobster Casserole Ingredients


1 - 10 oz package broccoli, chopped

2 tbsp water

1 cup cheddar cheese, shredded

6 tbsp butter or margarine, melted

2 tbsp flour

1/2 tsp salt

2 tbsp onion, chopped

1/8 tsp curry powder

1 cup milk

1 tbsp lemon juice

8 oz imitation crabmeat, cut in 1" cubes

1/2 cup soft bread crumbs


Mock Lobster Casserole Cooking Instructions


Preheat oven to 350 degrees

Combine broccoli and water

Put in microwave for 3 minutes and drain

Spray small baking dish, spread broccoli over botter and sprinkle with cheese

Heat 4 tbsp butter over medium heat

Add onion

Cook for 3 minutes

Stir in salt, flour, curry powder and milk

Stir continually until thickened, about 3 minutes

Stir in crab meat and lemon juice

Pour over broccoli

Top with bread crumbs and remaining 2 tbsp of butter

Bake in the oven for 30 minutes



Yields 4 servings



The curry gives it zing.  You may double the amount if you like it hot.  I serve this with savory rice.  I sometimes add 1 cup of cooked rice to the broccoli mix and top the dish with 2 cups precooked chicken.
