Maine Maple Chicken

5 chicken breast quarters
1 large onion, sliced
1/2 cup water
6 oz can tomato paste
1/2 cup maple syrup
1/4 cup white vinegar
1/4 cup olive oil
2 tbsp Dijon mustard
Salt and freshly ground pepper to taste
Garnish: fresh parsley springs
Place chicken, skin side up, in a lightly greased 13x9x2 inch baking dish.
Place onion slices between chicken pieces.
Pour water over chicken and onion.
Bake, uncovered, at 375 degrees for 30 minutes.
Combine tomato paste and next 4 ingredients.
Stir in salt and pepper to taste, and pour over chicken.
Bake 20 additional minutes or until chicken is done, basting frequently with tomato paste mixture.
Garnish, if desired.
Yield: 5 servings.
