1 lb chip steak or other thin steak
1 box bow tie pasta
1 red pepper, sliced
1 green pepper, sliced
1 medium onion, sliced
1 small container fresh mushrooms, sliced
1 small to medium sized zucchini, sliced
1 small can tomato paste
1 small can diced tomatoes
1 cup water
2 tbsp olive oil
3 cloves garlic, minces
Spices to taste:
salt
pepper
oregano
basil
parsley
crushed red pepper
thyme
Grated parmesan cheese(optional)

Heat 1 tablespoon olive oil in large skillet
Brown steak in olive oil
Remove from pan and set aside
Add remaining olive oil to skillet
Saute onions, peppers and garlic until vegetables are moderately softened.
Add mushrooms and zucchini to vegetable mixture
Saute until vegetables are soft.
Cook pasta according to directions on box, drain and set aside
Add tomatoes, tomato paste, water and spices to vegeatable mixture.
Cover and cook over medium heat approximately 15 - 20 minutes.
Slice steak into strips and add to mixture.
Continue cooking another 15 - 20 minutes.
Taste sauce and adjust flavor by adding spices as desired.
Add pasta to mix
Cook until heated through
Serve in warmed pasta bowls, sprinkle with cheese, if desired.
