Italian Meatloaf With Fennel and Mustard

2 lbs ground beef, lean
1 large onion, chopped and sauted in olive oil
2 eggs
3 cups bread crumbs, fresh
3 tbsp brown spicey mustard
1/2 tsp salt
2 tbsp fennel seeds, ground in a coffee grinder
1 tbsp black peppercorns

In small bown mix egg, mustard, fennel seed, black Peppercorms and salt.
Let soak at leat 5 minutes
Mix the rest of the ingredients and place in an oiled casserole dish
Cover and bake @ 350 degrees for 1 hour.
Serve with mashed potatoes, baked beans and brown mustard on the side to dip meatloaf bites in
Cold meatloaf also makes a good sandwich with brown mustard.
