Chicken Milano

Chicken Milano Ingredients


1 cup orzo

2 whole chicken breasts, boned and skinned, cut into bite size pieces

2 T. butter and two T. olive oil

1 onion, sliced

3 cloves garlic, minced

1 can diced tomatoes

1 small can tomato sauce

1 can sliced mushrooms

2 medium zucchini, sliced

1 medium yellow crooked neck squash, sliced

1/2 tsp basil

1/8 tsp red pepper, optional

1/2 tsp salt


Chicken Milano Cooking Instructions


Prepare orzo as package directs, and set aside.

In heavy skillet heat oil and butter, brown chicken then add garlic and onions.

Stir frequently.

Add tomatoes and seasonings.

Heat to a boil, reduce heat and simmer after adding zucchini and yellow squash and mushrooms.

Cover and simmer till tender.

Serve over orzo or add orzo to the mixture and serve.
