Baked Sweet and Tangy Hawaiin Chicken Ingredients

3-4 boneless skinless chicken breast1 1/2 cup cornstarch3 eggs beaten1/4 cup canola oilSweet Hawaiian Ingredients:1 cup pineapple juice1/2 cup brown sugar1/3 cup soy sauce low sodium1 tsp. minced garlic1 red pepper chopped1 20oz. can pineapple tidbits drained (reserve juice for in recipe)1 tsp. sriracha or red hot sauce1/2 tablespoon cornstarch 

Baked Sweet and Tangy Hawaiin Chicken Cooking Instructions

Preheat over to 325 degrees. Cut chicken breast into bite size pieces, season with salt and pepper.In one bowl slightly beat eggs, in another bowl place the 1 1/2 c. of cornstarch. Dip chicken into cornstarch first, then egg mixture.Heat oil in large skillet over med-high heat, cook chicken until lightly browned, then place in a greased 9x13 pan. In med. bowl whisk together pineapple juice, brown sugar, soy sauce, minced garlic, cornstarch and hot sauce. Add chopped red pepper and pineapple tidbits over chicken, then pour sauce mixture over. Bake 1 hour stirring every 15 mins. to coat chicken with the sauce. I like to serve it over rice.
