Baked Meat Loaf

Baked Meat Loaf Ingredients

2 lb ground (beef, pork, and veal) all together

6 slices bread (toasted and put through blender or use 1-1/2 cups bread crumbs)

1/2 cup grated Italian cheese

2 tbsp fresh parsley or you may use dried parsley (reduce amount to 1 tbsp)

1 large clove garlic, minced

Salt and pepper to taste

3 eggs 

Baked Meat Loaf Cooking Instructions

Combine all ingredients, shape into loaf and place in greased casserole.

Slice one carrot thin and 1 stalk celery.

Place around meat.

Add 1 medium onion sliced thin around meat loaf.

Put 2 slices of bacon on top of meat loaf and add one or 2 small cans tomato sauce over the whole thing.

Add same amount of water.

Bake in oven about 1 hour or until carrots and celery are cooked.

Continue to add a little water so sauce does not dry out.

This sauce is used as a gravy with vegetables in it.

Serve with mashed potatoes.  

Slice as desired.
