Zucchini Fruitcake

Zucchini Fruitcake Ingredients


3 eggs

2 cups sugar

1 tbsp vanilla

1 cup oil

2 cups grated baby zucchini with skins

3 cups flour

1 tsp baking powder

1 tsp baking soda

1 tsp salt

1 cup white raisins

1 cup crushed pineapple (drained)

1 cup chopped walnuts

1/2 cup coconut

1 cup cherries (drained and chopped)


Zucchini Fruitcake Cooking Instructions


Cream together the eggs and sugar together.

Add the vanilla, oil and zucchini.

Sift together the flour, baking powder, baking soda, and salt.

Slowly add and mix well.

Fold in raisins, pineapples, walnuts, coconut, and cherries.

Grease and flour a tube pan.

Bake at 350 degrees for 1 hour and 15 minutes.
