1 pkg. Lemon Flavor Pie & Pudding Mix
2/3 cup Sugar
2-1/4 cups Water
3 Egg Yolks
2 T. Lemon Juice
2 T. Butter
1 Pie Shell, baked & cooled

Combine pie filling mix, sugar and 1/4 cup water in sauce pan.
Blend in egg yolks and remaining water.
Cook and stir over medium heat, until mixture comes to a full bubbling boil.
Remove from heat.
Blend in lemon juice and butter.
Cool 5 minutes, stirring twice.
Pour into pie shell.
For meringue, beat 3 egg whites until foamy.
Add 1/8 tsp. cream of tartar then beat egg whites to form soft moist peaks
Add 1-2 tablespoons of sugar at a time (5 tablespoons in all) and beat well, until small amount rubbed between your fingers doesn't feel grainy.
Place on top of filling.
Bake at 325 degrees for about 20 minutes or until meringue is delicately brown.
