3/4 cup Sugar
1/4 cup Shortening
1 Egg
1/2 cup Milk
1-1/2 cup Sifted Flour
2 tsp. Baking Powder
1/2 tsp. Salt
Blue Brickle Topping:
2 cups Blueberries, well drained
1/2 cup Sugar
1/3 cup Flour
1/2 tsp. Cinnamon
1/4 cup Soft Butter
Streusel Filled Topping:
1/2 cup Brown Sugar
2 T. Flour
2 tsp. Cinnamon
2 T. Butter, melted
1/2 cup Chopped Nuts (optional)

Grease & flour 9 x 9 pan.
Mix sugar, shortening & egg thoroughly.
Stir in milk.
Sift dry ingredients & stir in.
Spread batter in prepared pan.
Sprinkle with desired topping (see below).
Bake at 375° for 25-35 minutes or until toothpick stuck into center comes out clean.
Serve warm.
Makes 9 - 3 inch squares.
Blueberry Brickle:
Make coffee cake except use 2 cups flour & carefully at the last add 2 cups well drained blueberries.
Sprinkle with mixture of 1/2 cup sugar, 1/3 cup flour, 1/2 tsp. cinnamon & 1/4 cup soft butter.
Bake 45-50 minutes (worth the wait!!)
Streusel filled coffee cake:
Make coffee cake except spread only 1/2 batter in pan.
Sprinkle with 1/2 streusel mixture, add remaining batter & remaining streusel mixture.
Streusel mixture:
Mix 1/2 cup brown sugar, 2 T. flour, 2 tsp. cinnamon, 2 T. butter (melted) & 1/2 cup chopped nuts (optional).
