Plantation Coconut Pound Cake Ingredients


1 cup butter softened



2 cups sugar



5 eggs



1 teaspoon cocnut extract



2 cups flour



1 1/2 teaspoons baking powder



1 teaspoon salt



1 cup buttermilk



1 cup shredded cocnut



 



Glaze



1 cup sugar



1/2 cup water



1 teaspoon coconut extract



 



 

Plantation Coconut Pound Cake Cooking Instructions


Sift together the flour, baking powder and salt.  Preheat oven to 350 degrees.



Cream together butter and sugar.  Add eggs one at a time, beating very well after each addition.  Add extract. Add the sifted ingredients alternately with the buttermilk to the mixture.  Beat well.  Stir in the coconut. 



Pour batter into greases 10 inch tube pan and bake for 50 to 60 minutes.



To make glaze:  combine glaze ingredients and boil for 2 minutes.  Pour over  warm cake.



Makes 10 to 12 servings
