Pizzelle

Pizzelle Ingredients

3/4 cup sugar2-3/4 to 3 cups flour1 tsp. baking powder6 large eggs1 cup vegetable oil (I use Crisco)1 botttle each of pure anise & pure almond extract

Pizzelle Cooking Instructions

Since this is a dense batter, use a heavy duty stand mixer.Mix all ingredients thoroughly.  Consistency should be thick.  Using a pizzelle iron (I use a two-cookie iron), place a dollop in the center of each circle.  Immediately press the handle down & hold tight for 3 seconds to expand the mixture.Check in a minute or so.  The end result should be a light to medium brown appearance.  Remove the baked products w/ a butter knife and place on a flat cookie rack.  EAT!!!
