Peach Cobbler

Peach Cobbler Ingredients


1-1/2 qt. Fresh Peaches, sliced

1 cup Sugar

1 tsp. Lemon rind, grated

Juice of 1/2 Lemon

1/2 tsp. Cinnamon

2 T. Cornstarch or Tapioca



Topping:

1 cup Flour

1 cup Sugar

1 tsp. Baking Powder

1 Egg, beaten


Peach Cobbler Cooking Instructions


Take fresh peaches and add sugar, lemon rind, lemon juice, cinnamon and cornstarch or tapioca.

Mix together.

Then pour into a 12" x 8" Pyrex glass pan, which has been sprayed with Pam.



Topping:

Mix by hand flour, sugar, and baking powder.

Add egg to mixture and stir together.

Sprinkle topping over peaches.

Drizzle 1/2 stick of melted butter over topping.

Bake at 375° for 45 - 50 minutes.

This is the best peach cobbler I have ever eaten.
