Lorelei's Panna Cotta

Lorelei's Panna Cotta  Ingredients


¼ cup Milk



2 ½ tsp Unflavored Gelatin (one envelope Knox)



1 ¼ cup Heavy Cream



½ cup Sugar



pinch Salt



1 cup Yogurt – plain nonfat



1 tsp Vanilla Extract



½ tsp Almond Extract


Lorelei's Panna Cotta  Cooking Instructions


Pour the milk into a glass-measuring cup, sprinkle the gelatin on top and set aside to soften, about 5 minutes. This allows the gelatin to bloom.




Combine the Cream, Sugar and Salt in a saucepan and heat until the sugar is melted. Remove from heat.




Microwave the softened gelatin and stir until the gelatin is dissolved, add to the cream mixture. Strain into a stainless bowl and place over an ice bath.



Allow to cool and then add the yogurt and flavorings and whisk to combine.




Stir occasionally, until it has a pudding-like consistency. Pour into ramekins and refrigerate overnight. To serve … unmold onto individual plates and garnish with fresh fruit.



Variations:



-May be made as healthy as desired by substituting any milk products. Using a combination of Buttermilk and Low-fat Yogurt results in a very tasty healthy dessert. (The higher the fat content the smoother the consistency and mouth feel). Note: do not heat either buttermilk or yogurt as the heating could cause the mixture to curdle.



- May use Splenda as a substitute for Sugar. This tastes very good, blends well without the need to heat your milk. Note: Use a lesser amount of Splenda than Sugar as it tends to taste sweeter.



-May be garnished with any variety of fruit or sauces, or flavored with various extracts or liqueurs.
