2-1/2 cup milk
3/4 cup sugar
3 rounded tbsp cornstarch
1/4 tsp salt
1 tsp vanilla
3 eggs (room temperature)
1 cup coconut
Meringue:
3 egg whites
1/2 tsp cream of tartar
3 tbsp sugar
1 tsp vanilla

Mix 1/2 cup milk, sugar, cornstarch, salt and egg yolks until blended.
In saucepan heat 2 cups milk.
When hot, add egg mixture.
Stir in coconut; cook until thick.
Remove from heat and add vanilla.
Pour into 9 inch baked pie crust.
Top with meringue.
Meringue:
Whip egg whites and cream of tartar until foamy.
Add sugar one tsp at a time.
Add vanilla.
Beat until stiff peaks form.
Bake at 400 degrees for 15 minutes or until brown.
