Crust:
1-1/2 cups all purpose flour
3 tbsp sugar
1/4 tsp salt
8 tbsp butter, softened
Filling:
3 peeled, sliced apples to fill 9 inch springform pan
1/2 to 3/4 cup sugar
1 tsp cinnamon
1/4 tsp nutmeg
Topping:
2 eggs yolks, beaten
1 cup heavy cream

Combine flour, sugar, salt and cut in butter until mixture resembles cornmeal.
Press into bottom and up sides of 9 inch springform pan.
Fill crust with sliced apples.
Combine sugar, cinnamon and nutmeg; sprinkle over apples.
Bake at 400 degrees for 15 minutes.
Combine egg yolks and cream; pour over apples.
Return to oven and bake for 30 minutes, or until apples are fork tender.
Cool on rack.
Approximately 10 servings.
